Banana Muffins

This is such a great way to use up over-ripe bananas which is what I had today. These muffins taste just like banana bread but a bit spongier and I like that. You can also adapt this recipe so many different ways - you can use half all purpose flour and half whole wheat flour and you can substitute applesauce for the butter. Also chocolate chips or nuts can be added.

Banana Muffins

1 1/2 cups flour (plus 1/4 cup for high altitude)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3 banana, mashed
1/3 cup butter, melted (or substitute applesauce for the lower fat version)
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla
3/4 cup mini chocolate chips or chopped walnuts (optional)

Stir together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

In a separate large bowl stir together mashed bananas, butter (or applesauce), sugars, egg, and vanilla. Fold the flour mixture into the wet mixture until combined, but be sure not to mix too much. Stir in chips are nuts if desired. Scoop into paper lined muffin tins or WELL greased muffin tins. Bake at 350 for 20-25 minutes.
