Crockpot Cashew Chicken
1 1/2 lbs chicken tenders
16 oz package frozen stir fry vegetables
4 oz can sliced mushrooms, drained
1 can condensed golden mushroom soup
3 tablespoons soy sauce
1 teaspoon ground ginger (I used 1/2 teaspoon)
1/2 cup cashews
In a crockpot combine chicken tenders and stir fry vegetables. In a bowl combine mushroom soup, soy sauce, and ginger. Pour over the chicken and vegetables. Cook on high for 3-4 hours. Stir in cashews and serve over hot rice.
